In the heart of St. Helena, at 595 Saint Helena Highway, a new culinary destination has quietly stepped into one of Napa Valley’s most iconic buildings.

Under-Study is located in the former Dean & DeLuca building. A space long associated with gourmet food culture in the valley. The large space that was home to Dean & DeLuca has been divided into two separate spaces. Under-Study sits behind the Napa Valley Museum of Art & Culture (The MAC), which occupies the front portion of the old Dean & DeLuca building and features rotating exhibitions and cultural displays that draw both locals and visitors.

More Than a Bakery

Under-Study is not just a bakery. It’s a café, marketplace, patisserie, butcher counter, and bottle shop. It is a project from the team behind PRESS Restaurant Napa Valley, the Michelin-starred restaurant in St. Helena. (Press is located next door to Under-Study.)

So rather than being part of a large corporate chain, Under-Study is essentially part of the Press restaurant group. The same local team that operates one of Napa’s most acclaimed restaurants that helped shape the Napa Valley restaurant scene.

Press, the restaurant was originally founded by Napa food and wine entrepreneur Leslie Rudd and is now led by his daughter, Samantha Rudd. Under-Study brings a new, more casual yet still refined experience, blending pastry, café fare, marketplace offerings, and seasonality back into a historic Napa food scene.

Under-Study finally brings something Napa has been missing: elevated, modern pastry design and flavor. The aesthetic is upscale and European-inspired pastries with glossy finishes, precise layers, and architectural lamination. The kind of pastry case that makes you pause. And most importantly, it tastes as polished as it looks.

What to Order at Under-Study

The menu at Under-Study is vast. Under-Study has so much to offer at all times of the day. I always get a pastry or two and a latte at any time of the day. (No matter how full I am, I know I will need a snack later.)

  • Breakfast: For me it’s a toss-up between the breakfast sandwich, and french toast stick, and the bacon sampler.
  • Lunch or Later: I love the sandwiches and the Bougie Boxes. I love the Bougie boxes because they come with a side like fries or house-made chips.
  • Snacks: I love the American Wagyu skewers and truffle fries.
  • Seasonal Specials: During the summer, I loved the grilled corn and heirloom tomato.
  • Signature Bites: Items I haven’t tried (they are too adventurous for me), sweet and sour pig’s ears, grilled octopus, and lobster corn dog with white sturgeon caviar on top.
  • Drinks: I love Under-Study’s hot and iced latte, and my daughter loves the matcha latte and the chai latte.
  • Pastries and Breads: If you lean toward savory pastries (like I do), this is where Under-Study shines.
    • Everything Knot: is a croissant, chive cream cheese with fried shallots and bagel seasoning. (I have had variations of this at a few places, but Under-Study does it the best.
    • I always have to get the seasonal fruit danish and the pain au chocolat (chocolate croissant).
    • The various focaccia offerings are excellent: structured crumb, generous olive oil, beautifully salted. I especially love the green onion and sesame focaccia.

Under Study Added Bonus:

There is a glass wall dividing The MAC and Under-Study. When you are inside Under-Study, you can look behind you into The MAC and get a preview of the current exhibition. This is an interesting design element I love. Turning around while you’re in line to order or while enjoying a coffee and a pastry, you can catch a glimpse of the museum. A quiet invention to explore The MAC’s current exhibit further.

Final Thoughts

Napa Valley has no shortage of good bakeries. However, an elevated pastry, the kind you see in Paris, Las Vegas, modern Los Angeles cafés, or even as close as San Francisco, has been noticeably scarce in the Napa Valley. Under-Study fills that gap beautifully. It brings visual sophistication and refined techniques. The savory options and extensive menu make it a perfect stop at any time of the day.
